Higher Protein Edamame Hummus
Ingredients:
1 pack shelled edamame (ready to eat; I get mine from Trader Joe’s)
1/4 cup tahini
About 1/4 cup water
Juice of 1 freshly squeezed lemon
2 cloves garlic
2 tbsp olive oil
1/4 - 1/2 cup cottage cheese (makes it so much better but you can omit!)
1/2 teaspoon ground cumin (or to taste)
1 teaspoon sea salt (to taste)
2 ice cubes (optional)
Directions:
• In a food processor, combine the edamame, tahini, lemon juice, garlic, olive oil, cottage cheese, cumin and sea salt.
• Gradually add in water as you blend. You can also add ice cubes at this stage to make it extra creamy.
Top with freshly cubed tomatoes, cucumbers, herbs, a drizzle of olive oil, and enjoy!✨
