Higher Protein Edamame Hummus

Ingredients:

  • 1 pack shelled edamame (ready to eat; I get mine from Trader Joe’s)

  • 1/4 cup tahini

  • About 1/4 cup water

  • Juice of 1 freshly squeezed lemon

  • 2 cloves garlic

  • 2 tbsp olive oil

  • 1/4 - 1/2 cup cottage cheese (makes it so much better but you can omit!)

  • 1/2 teaspoon ground cumin (or to taste)

  • 1 teaspoon sea salt (to taste)

  • 2 ice cubes (optional)

Directions:

• In a food processor, combine the edamame, tahini, lemon juice, garlic, olive oil, cottage cheese, cumin and sea salt.

• Gradually add in water as you blend. You can also add ice cubes at this stage to make it extra creamy.

Top with freshly cubed tomatoes, cucumbers, herbs, a drizzle of olive oil, and enjoy!✨
