Higher Protein Banana Muffins

Made easy with Trader Joe's Protein Pancake Mix, these are the perfect meal prep muffins for a grab-and-go snack or part of your breakfast! Makes about 6 muffins.

Preheat oven to 350F

For the wet ingredients, combine:

3 medium ripe bananas, mashed (240 grams, ~1 1/2 cups)

2 eggs 

2 tbsp maple syrup

2 tbsp avocado oil

In a separate bowl combine the dry:

1 1/2 cup pancake mix

1/4 tsp baking soda

1/2 tsp baking powder

Cinnamon to taste

Pinch of salt 

Fold the dry ingredients into the wet. At this point, add any mix-ins (chocolate chips and walnuts recommended!) 

Evenly distribute between muffin liners (this recipe makes about 6 regular muffins) and bake at 350F for about 15 minutes or until the toothpick comes out clean. Make sure not to overbake since it is a pancake mixture it cooks quickly and you don’t want them to be dry!
